Easter Carrot Snack Mix

I first made this snack mix a few years ago with Santa hats ( and instantly imagined making it with carrots the following year for Easter.  I finally made it happen and here it is.  This is a simple mix that you could put any snack items in you would like.

What I used:

  • Rice Chex
  • Pretzel Sticks
  • White chocolate melts (orange, green, white)
  • Reese Pieces or M&M’s
  • Bugles Chips


 I made the carrots by using a broken pretzel and Bugle.

  1. Dip tip of chip into orange chocolate not getting any in the opening.
  2. Then let cool in freezer for a few min.
  3. Next dip tips of the pretzels in the green chocolate and place in the opening.
  4. Then let cool in freezer again for a few min to sit up.
  5. After cool dip the pretzel end into the green chocolate.
  6. Let cool while finishing the Chex mix.

Chex Mix

  • In a large bowl place Chex and pretzels.
  • Warm white chocolate melt and poor over top
  • Place on a lid and shake or mix with a spoon.
  • I place mine in freezer until chocolate is set.
  • When done brake it apart and place it in a bag or clean bowl.
  • When ready to serve or putting in goodie bags is when I mix in the M&M’s and carrots.  This  limits the amount of white chocolate that comes off and looks like powdered sugar as it is moved around.

Santa Hat Chex Mix

Santa Chex Mix



Santa Chex is super easy!  The best part is seeing the kids eyes when they see the Santa hats.  I am thinking of just how I am going to do this with carrots for Easter.

You can add or skip any item is kind of a whatever goes thing.


Rice Chex




White and Red Candy Melts

Take bugles and dip in red candy melt according to directions on package.  After they harden dip the tip and base in white.  (its important not to add finished hats and M&Ms to the mix until the very end after its hard)

Next in a large bowl put pretzels and Chex

Using one bag of melted white candy melt poor over Pretzels and Chex and mix well.  Let cool

Place M&Ms and Candy Hats back into the mix.

St Patricks Day Eggs

What better way to start St Patrick’s day than with shamrock eggs.


Its easy to do but have seen a lot of people with mess-ups so thought I would pass along a few tips.
  • Make sure your peppers are level.  Set them down on your pan and make sure they sit flat.
  • Make sure your pan is truly non stick.
  • Warm pepper on one side.
  • Have your egg in a bowl or measuring cup to for easy poring.
  • Flip pepper
  • With one hand hold down pepper while you pour just enough egg in to seal the bottom.
  • Let go of pepper and fill with egg.
  • I salted and placed dill on top.
  • Cut little stems and warm.
  • Cover with lid to help the top cook.  (You can flip but I wanted the egg to stay nice and white.)
  • Enjoy

Cream Egg Cupcakes

These cupcakes are so cute and equally as rich.
The best part is they can be as easy as you want if you use boxed cake mix and prepared frosting.

*Use your favorite chocolate cake mix/recipe. (I used a dark chocolate cake mix)
*Favorite white or buttercream frosting (frosting at the bottom of the page)
*Large Cadbury eggs frozen
*Small Cadbury eggs optional for decoration.

1. Make cake batter according to directions
2. Put small amount of batter in cupcake paper
3. Place frozen egg in the middle
4. Top with more cake mix
5. Let cool
6. Frost and top with a dollop of yellow and small Cadbury egg. Enjoy!

Vanilla Bean Buttercream

1 stick salted butter – room temperature
1 stick unsalted butter – room temperature
1/2 cup shortening
1 tablespoon Vanilla extract
1 1/2 pounds confectioner’s sugar (powdered sugar)
4 tablespoons very cold milk

Pizza Dip

This is one of the best dips I have ever had.  Every time I make it someone says how it taste like Pizza Hut pizza.  I have to agree although I am not sure how.  I have served it several ways with EVOO / garlic rubbed toasted french bread and soft slices french bread.  Soft is my personal preference it is not only easier to eat but more like pizza crust.
If you try only one new recipe this year make this the one!

  • 4 ounces cream cheese (room temperature)
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1 cup pizza sauce
  • 1 cup mozzarella, shredded
  • 1/4 cup parmesan
  •  pepperoni
  • green pepper
  • black olives
  • sausage
  • onion
  • french bread slices

  1. Mix the cream cheese, sour cream mayonnaise, 1/2 cup mozzarella and parmesan and spread it across the bottom of a pie plate.
  2. Spread the pizza sauce on top and sprinkle with remaining 1/2 cup mozzarella and top with the toppings.
  3. Bake in a preheated 350F oven until the bubbling and the cheese has melted and turned golden brown on top, about 20 minutes.
  4. keep warm and serve with bread.

Crock Pot Sesame Chicken

Ok so I am kind of funny when it comes to food and don’t care for many all-in-one crock pot meals. This one however looked good so I had to try it.  To my surprise and excitement it was a great one!  Rice is a must with this one its great with the sauce and next time I will serve with steamed broccoli.   The recipe came from found it through pinterest and glad I did it was something different and my 9-year-old requested it again soon.  Oh the best part was I had everything on hand and how often does that happen?

4-5 frozen chicken breasts

1/2 cup diced onion

2 cloves garlic (minced)

1 cup honey

1/4 cup ketchup

1/2 cup low-sodium soy sauce

2 tablespoons vegetable oil

1/4 teaspoon red pepper flakes (could add more it was not spicy at all)

4 teaspoons cornstarch (optional step)

1/3 cup water

rice made the way you like it

1/2-1 tablespoon  sesame seeds

4 green onion ends chopped

Firts combine onion, garlic, honey, ketchup, soy sauce, oil and red pepper flakes. Then pour over chicken. Cook on low for 6-8 hours depending on the size of chicken.  4 hours for fresh

Remove chicken leaving sauce in crock pot and shred

In a small bowl, dissolve 4 teaspoons cornstarch in 1/3 cup water (although not sure this step is needed I might skip next time).  Add to crock pot. Stir to combine with sauce. Cover and cook sauce on high for ten more minutes, or until slightly thickened.

You can either add chicken back to the sauce (as I did) or spoon over the finished plate.

Place chicken on top of prepared rice and top with sesame seeds and chopped scallions.

Heart Cinnamon Rolls

Valentines cinnamon rolls are super easy and are great for a fast easy breakfast.

Last year we did strawberry heart pancakes and they were such a hit.  This year is heart cinnamon rolls and fresh berries with yogurt.

All you need to do is buy a refrigerated tube of cinnamon rolls.

1.  Unroll 1/2 of a cinnamon rolls and re-roll it starting with the other.

2.  Pinch in the middle and place in baking pan.

3.  Follow the tube directions for the rolls and your done.
