Chicken and Beer Chowder

What  is better on a cool fall day than a warm soup.  Well it may not be fall yet
but today we had a cool crisp day so I made my very favorite soup of all time.
Its deep and creamy flavor is balanced so wonderfully with the dark beer
and red pepper flakes.
I made a double batch so I could freeze the leftovers.  It was a good thing to as we had a surprise visiter come and join us for dinner.

Needed for single batch:

  • Shredded Chicken, I used https://danielleyarian.wordpress.com/2012/08/23/electric-presser-cooker-shredded-chicken/ but you can use 1 lg can of chicken.
  • 4 tablespoons of butter
  • 2 large potatoes
  • 3 stalks of celery
  • 1 large onion
  • 1 qt of chicken broth
  • 1 cup heavy whipping cream
  • 1 bottle of dark beer (Amberbock is perfect)
  • 1 cup cubed Muenster cheese
  • 1/2 tablespoon red pepper flakes  (you can add more if you want it to be real spicy)
  • 1 tablespoon parsley
  • 1 tablespoon thyme
  • salt to taste

Put everything in the crock pot EXCEPT the cream, beer, and 1/2 the cheese cook on low until potatoes are done.

 1 hour before serving I put the reserved cheese, beer, and cream in and continue cooking for a while.  (You can put it all in at once I have done it.  The cheese all melts into the soup though the other way the flavor is throughout but there are chunks of yummy chewy cheese.  That is what is on the spoon in the photo.  Also the beer flavor is not as strong)

A how did that ever pass for working, did they even read the steps they were giving, or do you think they get a laugh out of my attempt. Many friends have told me that I need to post the bad ones so they don’t bother and let them know the good pins so they can give them a try. So here goes!
