CHICKEN BROCCOLI SUPREME

Posted on

I found a pin for CHICKEN BROCCOLI SUPREME on a lot of my friends boards and thought the photo looked so good I just  had to try it.  The pin took me to http://www.justgetoffyourbuttandbake.com/?p=984.  This is like the chicken casserole on the label of the cheese soup can but homemade.  The original had poppy seeds but I didn’t include them as I hate having little black dots in my teeth.
I have to say mine didn’t look as good as the one posted on her page but didn’t look bad.  It tasted great though.  It was much better than the condensed soup version and not nearly as salty.  The best part is the broccoli what a difference the fresh made verses the frozen.  I also liked the reheat directions where she suggested to warm in microwave and then place under broiler to crisp the crackers.  It worked great my daughter was so excited to eat the left overs the next day.   I will be making this one again for sure.

Ingredients:

1 – lb. fresh broccoli Break in pieces, and steam for 2 minutes. 3 cups cooked chicken breasts – Break up in small pieces 3 cups Grated Cheddar Cheese divided 2 tubes Ritz Crackers 1 stick melted butter 1 tablespoon poppy seeds

SAUCE: 1/3 cup Butter- melted 1/4 cups Cornstarch, dissolved in 1/2 cup COLD Water 1/3 cup Chicken Broth 1/4 tsp. Salt 1/4 tsp Pepper 2 Cups Milk 1 1/2 cups of the above Cheddar Cheese

Directions:

In greased 13×9 pan, layer the broccoli and chicken, then in saucepan over medium heat, combine the melted butter, cornstarch dissolved in water, chicken broth, seasonings, and milk. Stir well, and continue stirring until sauce has thickened. Turn heat down to low, and add 1- 1/2 cups grated cheddar cheese. Stir until melted. Pour over the chicken and broccoli. Top with 1- 1/2 cups grated cheddar cheese.

Melt the butter, and add the poppy seeds, and stir well. Crush Ritz crackers in large zip-lock bag with a rolling pin. Don’t crush too small. Add crumbs to the melted butter. Sprinkle crumbs over the top of the grated cheese.

Bake uncovered at 350 degrees for about 30 minutes.

About danielle

Hi! I am Danielle Interior designer turned stay at home mother of 3 wonderful kids. I love to do crafts, projects, parties, and photography. With this being said I am a not a pro by any means and have had many many failed attempts. Some funny and some just plain ugly:) I do not care for cooking and house work. My goal is to find a better, faster, more organized way to just get it done so I can spend time with the ones. This is where Pinterest has come into my life. Pinterest and I have a love/hate relationship. I have spent the better part of a day looking up great ideas and never putting them to use. What a waste of time... or is it? Sometimes I find something that rocks and I try it and the world is a better place:) But the worst is when I try something and it’s a big bust. A how did that ever pass for working, did they even read the steps they were giving, or do you think they get a laugh out of my attempt. Many friends have told me that I need to post the bad ones so they don’t bother and let them know the good pins so they can give them a try. So here goes!
